Eat. Drink. Lounge. Don’t mind if we do. Fletcher’s is Park City’s newest restaurant owned by Steve and Sue Demarest, with Chef Scott Boberek. Locally sourced ingredients, fresh food, grass-fed meats, organic chicken, Fletchers is all about bringing the highest quality food to the plate. Chef Scott Boberek is a Chicago Native and known for his ability to take the simplest ingredients and make them into something incredible. Fletcher’s menu features fantastic options from a perfectly cooked Beef Wellington, to the Tuna Tartare. Of note: Fletcher’s offers a separate Gluten-Free Menu.

We are over the moon excited about this new foodie hot spot; so much so that we thought we’d gather for another edition of the PUREtable in its honor. Join us, won’t you?

Q/A with Owners Steve and Sue Demarest

 

When/Why did you open Fletcher’s?

We opened in December of 2014. We saw a need for an upscale and comfortable restaurant on Main street that had an element of nightlife as well.

What do you love about running a restaurant?

Steve has always wanted to have an establishment in a resort town where he could talk to everyone and learn their story; where they are from, etc. Opening Fletcher’s has been a great opportunity for us to meet so many people from all over the world. Guests seem equally delighted to meet us and share their stories, many times of their dogs (which Fletcher’s is named after). Interacting has been so fun and we’ve made many ’small world’ connections. We ask people to sign our guest book and leave us notes. It’s endearing to read the thoughtful comments and that makes us really happy to know guests have enjoyed themselves.

If you could invite anyone to dinner at Fletcher’s, who would it be and why?

Robert Redford otherwise know as ‘Bob’ to the locals. Aside from an amazingly talented actor, Redford is symbolic of Sundance and I think he’s helped Park City become what it is today. I think he’d like the natural elements we’ve used in the design and would feel right at home. Invitation is open!

What is your favorite food?

Beef Wellington or Peanut Crusted Salmon…it’s a toss up!
